In fact, Lechoni\u2019s is just a few blocks south of the Strip, Ensenada\u2019s Calle Primera. And now they\u2019re in the Valley, too.<\/span><\/p>\n<blockquote><p><span style=\"font-size: medium;\"> \u201cOur lechones come from local farms, but we make the original recipe as don Ariel Ceballos taught us in M\u00e9rida, and we get our oregano, achiote, pepper and oranges straight from Chuburn\u00e1,\u201d says Silvia Lencioni, who owns and operates Lechoni\u2019s along with her husband, Rodolfo. <\/span><\/p><\/blockquote>\n<p><span style=\"font-size: medium;\">Known for their tacos and tortas with juicy, tender suckling pig, or lech\u00f3n, in Spanish, and cochinita pibil, a slow roasted traditional pork dish, Lechoni\u2019s has garnered a following of local foodies. <\/span><\/p>\n<p><span style=\"font-size: medium;\">This year they\u2019re opening up a new taco spot in the Valley, inside Chateau Camou winery, which will also feature campestre-style cooking, like Ramonetti cheese quesadillas, Spanish tapas with cherry tomatoes, olive oil, basil and ricotta cheese and garlic-roast mushrooms simmered with white wine. <\/span><\/p>\n<blockquote><p><span style=\"font-size: medium;\">\u201cWe\u2019re going to keep it simple and tasty, and we plan to be open until late October or until the weather allows us.\u201d <\/span><\/p><\/blockquote>\n<p>&nbsp;<\/p>\n<p>&nbsp;<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Taste the best cochinita of M\u00e9rida in Ensenada. &nbsp; Erick Falc\u00f3n | Todos Santos &nbsp; You only need three bites off Lechoni\u2019s baked suckling pig to feel like you\u2019re eating in M\u00e9rida\u2019s Chuburn\u00e1 Market.
